The Land – CieL Dining

Before CieL opened its doors in Thảo Điền, chef Lê Việt Hồng went looking for the ingredients his menu would be built on. We followed him into the Hoàng Liên Sơn range: the farms, the foragers, the people who grow what ends up on the plate.

The chef had returned to Vietnam after training at Ferrandi Paris and working in kitchens like noma, SÉZANNE and Disfrutar. What he wanted to say with this film was simple: the produce of this country belongs at that level. Our job was to film it that way — the mountains, the hands, the raw ingredient, with the same care a tasting menu gets.

CieL opened in September 2024. Seven months later it was awarded One MICHELIN Star, and chef Lê Việt Hồng received the MICHELIN Guide Vietnam 2025 Young Chef Award. The restaurant has kept its star in the 2026 guide.
